Assam Satrupa
Kama Black –
This estate is located in the
uppermost section of the Assam region of India close to the
Burmese border. Kama is a huge leaf, with a big, juicy,
vigorous flavor and the bracing strength of Assam leaf. Made
by the traditional Orthodox method, this leaf is long, twisted
and a beautiful grey/black color. This family owned tea garden
is in the region where wild growing tea was first discovered
by Major Robert Bruce in 1823. This discovery led the English
to establish the first cultivated tea gardens in India here in
Assam years later.

Fujian Province in
eastern China is home to extraordinary Wulong (oolong) teas.
Chinese legends pay homage to the reputation of these most
revered teas, which were once enjoyed only by the Celestial
Emperor. Grown in a mountainous region famous for rocky cliffs
and dramatic, rugged terrain, Da Hong Pao is cultivated in a
few gardens from plants propagated from the original ancient
tea bushes. Daoist priests tend the ancient bushes and pick
less than one pound of tea a year, which they obligingly send
to Beijing.

Bamboo Tips
Grown in Sichuan Province near
Mending Mt, this tea is as close to perfection as tea can be.
This is a ‘bud-only’ (sometimes called a ‘sparrow’s tongue‘) yellow tea
that is meticulously picked in early spring
and sorted by hand one bud at a time. Mending Mt is revered in
China as being the birthplace of cultivated tea and tea
culture in China. Bamboo Tips are named for the lush, dense
bamboo forests in the area, and the habit of the bamboo plant
to emerge in spring by sending up just the tiniest pale green
shoots. On Mending Mt we had to ride a cable car up the
mountain, hike a mile uphill and wait half an hour to taste
this rare tea..…you can enjoy it much more easily!

stove (low heat)or in a slow oven (300°F.) Rifi is

make delicious and impeccably well-made BBQ and grill sauces.

When I started
looking for Mediterranean sardines years ago, I had no idea that
they would be so hard to find. None of my vendors had any, and
when I asked why not, they just looked at me and shrugged. Over
fishing, some said. The Europeans eat them all, said others. So,
you can imagine my delight when I recently discovered these
tender and delicious sardines from Spain. Plump and silvery,
they really dress up an antipasto platter. I like to wrap them
in a piece of roasted piquillo pepper and serve with very cold
Spanish cava.
