The
energetic bees that work for Big Island Bees forage
for nectar in one of the most pristine places on the
planet…the island of Hawaii. And, if it isn’t enough
to simply ‘be’ in an environment is gorgeous, pure
and natural, the bees ‘follow the flower blooms’
around the island (they are transported three times
a year) to lush forests, open ranch lands, and
macadamia nut tree groves along volcanic slopes
where they forage and collect nectar at its peak
ripeness. As a result, each of these three pure,
single floral honey varietals has a distinctive,
sweet, flavor and characteristic texture. These
subtle flavors from rare blossoms naturally
complement cheese, teas and other fine foods. |
Macadamia Nut Blossom Honey -
Macadamia nut honey is
gathered from February to April.
This distinctive and exotic
honey is floral and nutty in flavor,
velvery in texture, and dark
amber in color. Macadamia Nut
Blossom Honey is gathered by
bees from the blossoms of
the macadamia nut tree
(Macadamia integrifolia), a native of
Australia. There are many
macadamia nut orchards on the
Big Island of Hawaii.
Beekeepers and orchard owners find
it mutually beneficial to place
beehives in flowering
macadamia nut plantations. The
orchard's trees are
pollinated by the bees,
resulting in a more bountiful nut
harvest. In turn, the beekeeper
is rewarded with this
velvety, rich, amber-colored
honey. |

'Ohi'a
Lehua Blossom Honey -
Lehua honey is gathered
from May to July, and it is light and
delicate in flavor, thick and
creamy in texture and golden in
color. It comes from the Lehua
blossom which is the flower
of the 'Ohi'a tree, a
beautiful, native hardwood found in
verdant, rolling pastures 4,000
feet up the north side of
Mauna Kea volcano. There is a
legend associated with
Ohia tree and it's blossoms.
One day Pele, the goddess of
the volcano, met a handsome
young man named Ohia.
She desired to have him as her
sweetheart. He confessed
that he already was in love
with another young girl, Lehua.
This enraged Pele and she used
her magical powers to
transform the young man into
the ugly Ohia tree. Lehua
was terribly sad and pleaded
with Pele to return the young
man back to his human form.
Pele refused so Lehua
begged the gods to help her to
be reunited with Ohia.
Instead of changing Ohia back
to a human, the gods
transformed Lehua into a lovely
red blossom to adorn the
Ohia tree. Now when anyone
picks a Lehua blossom, it
will rain because the lovers
have been separated. |

Wilelaiki Blossom Honey -
Wilelaiki honey is
gathered from August to November, and
is very floral and spicy in
flavor, smooth and viscous in
texture and light amber in
color. This exotic divine honey is
produced from the
Christmasberry tree (Schinus
terebinthifolius or pepper tree
) which is native to
Brazil and probably introduced
to Hawaii at the turn of the
20th century. This broad-leaf
evergreen shrub grows as
tall as 25 feet in the lush,
tropical conditions of Hawaii. It
produces sweet, white, aromatic
flowers, which are
followed by tiny red berries in
December that show vividly
against the shrub’s dark green
foliage. |

Chilean Gourmet

Chilean Gourmet honeys are collected by a group of
70 Mapuche families from the pristine native forests
in the Araucania region of Chile. These unique and
delicious honeys are raw and non-filtered, and are
harvested and packed without preservatives or
additives in the traditional manual methods
practiced by the Mapuche people.
In partnership
with Chilean Gourmet and the University Catolico de
Santiago, these producers have perfected their
Native Tree and Ulmo tree honeys, and have recently
introduced Tiaca honey. As demand for these native
honeys increases, opportunities will open up for
more community members, and the argument for
preserving the native forests of this region will
gain ground. Chilean Gourmet is profoundly committed
to supporting local sustainable development of
different small farmer communities throughout Chile.

Ulmo
Honey
Ulmo honey is the most prized and sought after honey
in
Chile. The blossoms of the Ulmo
trees provides a rich, floral
nectar that translates into a
creamy honey with a buttery
texture, and a taste and aroma
that is a subtle mixture of
aniseed, jasmine, vanilla and
clover, tea and caramel. This
slow-growing evergreen grows in
the rainforest in the
Aracania region of southern
Chile. These stately trees
flower from the January until
March (remember, our winter
is the Chilean summer) covering
the mountains and hillsides
in large, white camellia-like
