Yoshiji Takebe. Kishibori shoyu (soy sauce) is made
on Shodoshima Island, a 60 sqaure mile island that
is the 2nd largest of the 700 islands in Seto Inland
Sea. These islands have been a source of salt
production since the 14th Century and shoyu brewers
followed, relying on the purity of this salt for
their artisan shoyu. |
