Northern

Mineral Bamboo Salt (2x burnt)
We
have a very limited supply of this special
mineral-rich salt that we hand-carried back from our
recent trip to Korea.
Each bag contains 250 grams, about 2 cups of soft,
pearly white velvet ( finely powdered salt). The texture of this
salt is soft and fine and the
flavor is subtle but delicious.
Bamboo salt has a slight minerality to the flavor
that is enhanced by the roasting process. Minerality
in foods and beverage is an
important component of taste in Asia, but something
that we in the West have little exposure to or
familiarity with. For example, most of the best
teawares in China, Japan and Korea are made of
high-quality, fine-textured unglazed clay because
the clay body will influence the flavor, sweetness
and aroma of the tea and impart a slight minerality
to the overall taste of the tea liquor.
In Korean mineral bamboo salt is known as Juk-Yom.
Historically, this salt was made in Buddhist temples
to flavor a simple diet rich in local greens, wild
roots, and forest products. This unique sea salt is
made by filling splits of fresh bamboo (that are cut
at about 3 years of age so they are slender and
flavorful) with coarse, sun-dried sea salt and then
capping the ends with natural, yellow clay. The
bamboo tubes are then roasted over pine wood fires
in specially designed salt furnaces from 1 to 9
times. Before each new time that the salt is put
over the fire the salt is put into a new,
freshly-cut bamboo tube. The more times over the
fire the more costly the salt. After roasting, the
salt is released from the bamboo tube and ground
into a gossamer powder.
What makes bamboo salt so special is that the salt
naturally contains minerals and trace elements (phosphorus,
potassium, copper, and zinc ) from the sea water and
the high roasting
temperature of 1300-1500°C eliminates impurities
from the salt. This process also allows the bamboo
juice, pine resin and the aroma of yellow clay to
contribute flavor to the salt.
Bamboo salt that has been roasted one, two or three
times (1x, 2x, 3x, etc) is used for culinary
purposes; bamboo salt that has been over the fire 4x
to 9x is consumed for healthful benefits and is used
in cosmetics and skin care products. In general,
bamboo salt is appreciated in Korea for its flavor
and the health advantages that it is believed to
possess from its high mineral content.
