       Market when we visited New Mexico many years ago. We
       were fortunate to have Deborah Madison show us around the
       market and introduce us to many of the growers and food
       producers in her area.
       Because of our discussions with the local chile growers, we
       understand why this famous chile is so difficult to find outside
       of Chimayo, N.M. Direct from the grower to us (and now to you),

Safinter - La Vera, Spain

La Vera pimenton is an exceptional product. The cultivation of red peppers was introduced to the La Vera region of Extremadura, Spain in the 16th century by monks in the Yuste Monastery. The process of drying the peppers is elaborate; it begins with a wood fire that burns with the wood of holm oak trees. This wood provides the right degree of heat necessary to slowly dry the peppers over a period of 10-15 days, and just the right amount of subtle rich smokiness to the pimenton.

During this drying/smoking  workers turn the peppers by hand until the proper dryness is achieved. The unique characteristics of this beloved pimenton have earned La Vera pimenton the official protected seal of authenticity designation known as a DO (Denomination of Orgin) from the government of Spain. Our smoked paprika is from Safinter and it is the traditional agrodulce ( bittersweet ) variety. This is the most popular variety in Spain.  It is made from jarita peppers and has a deep, earthy flavor with just a hint of bitterness.
