This
season’s Nepalese tea is from our new supplier Jun
Chiyabari Tea Garden, a small & exclusive single
estate located in the mid-eastern Himalayan hills of
Nepal. It is a traditionally-formed black tea, though
its appearance is light in color due to the effects of
altitude on chlorophyll production in the fresh leaf.
This hand-made Nepalese black tea is somewhat similar
in flavor to the Everest Hand-Rolled Tips and
the Shangri-La Hand-Rolled Tips that we have
had for the past few years.
Jun Chiyabari’s tea gardens are located at 6,000 to
6,500 feet in the ‘hills’ around Hile, a typical
Himalaya hill-town, about 15 km west of Ilam (the
major tea-producing region of eastern Nepal) not far
from Sikkim and Darjeeling to the east, and Sagarmatha
(Mt Everest) to the north.
Our High Himalaya Hand-Rolled Tips is a second flush
tea. The second flush produces some of the best black
teas from the region.
As the garden’s tea director says: “The second
flush leaf brings with it a character that is bright &
warm, nutty & fruity, all in a deliciously complex mix
of aroma and taste; a true delight to the senses.
Hand-rolling is a laborious and time consuming task
that requires patience, tender touch and a passion for
creation from the person rolling the leaves to ensure
that everything is perfect. This is why only women are
selected for this delicate task.”
Use 1.25 Tablespoons (2-3 grams)
per 6 oz of water
Steep 1 infusion at 4 - 5 minutes.
Water temperature should be 185˚ - 200˚ F |
