The concept
of ageing tea is not yet well-known in the Western
world among black tea drinkers. Conventional wisdom
outside of East Asia is that black tea remains at its
best for only one year.
However; in Yunnan Province in southwest China, black
tea produced locally from the indigenous, wild trees
is comprised of a large percentage of buds (dian hong)
and is not drunk until it is really ‘ready’ – which
sometimes means that it needs to develop and mellow
for several years.
This very special black tea is harvested from
old-growth, wild-arbor tea trees and has a clean,
mellow, and incredibly smooth flavor. It has been
roasted slightly over charcoal in the local style, and
represents the terroir of Yunnan very nicely.
This 4-year-old Yunnan dian hong wild arbor tea
reminds us, in a stylized way, of our Taiwan Sun Moon
Lake black tea, but with the added layers of complex
flavors that come from being grown of native stock in
Yunnan Province.
This tea is much better when drunk with a bit of age.
It is ready to drink now, and we have it right now for
your drinking enjoyment – don’t miss this one!
Use 2 heaping Tablespoons per 6
oz of water.
Steep 1 infusion at 3 - 5 minutes.
Water temperature should be 190˚ - 200˚ F |
