Tung Ting is
Taiwan's most famous semiball-rolled style tea. Tung
Ting mountain is located in Lugu Township, Nantou
County, Taiwan, and is known for producing delicious,
substantial and chewy, very floral teas. Tung Ting
teas are priced according to where on the mountain
they come from: the higher the elevation, the more
difficult the growing conditions and the small the
harvest are.
Ice Jade
is harvested in Lugu Township, and is a hand-processed
tea. Ice Jade is plucked at a higher elevation
than our Frost Jade, and it’s flavor reflects
the affects of increased altitude and thinner, colder air. Ice Jade
is more austere and flinty than our Frost Jade:
the floral notes are crisp and precise. Ice Jade
is comprised of blended leaf from several tea farmers,
and skillfully fired by a tea master to bring out the
natural rich, flavor and arresting floral aroma of the
leaf. There are several different tea bush cultivars
grown on Tung Ting, and the flavor of ice Jade is a
composite of the leaf grown in that area. Ice Jade
has a characteristic Tung Ting lingering finish with
the pleasant addition of an undertone of stone and
mineral.
Western-style steeping:
(Medium to large sized teapot: 20-32 oz)
Use 1 heaping teaspoon (2-3 grams) of tea per each 6oz water
Steep 1-3 infusions at 2-3 minutes each.
Water temperature should be 180˚ - 190˚ F
Asian-style steeping: (small teapots under 10 oz or a gaiwan)
Use 1 heaping Tablespoon (5-6 grams) of tea per each 6oz water
Steep upwards of 6-8 infusions (or more!) at 10 seconds to 1 minute each
