Tung Ting Oolong tea is often
referred to as one of the ‘Orchid Oolongs’ or ‘Jade Oolongs’ from Nantou
County, the premiere Oolong-growing region of Taiwan.
Known also as Dong Ding Oolong, this Oolong tea is manufactured in the
Fujian ball-rolled style, not the traditional open leaf style of Formosa Oolongs. Tung Ting
Oolong does not have the clean, stone-fruit taste of the traditional
Formosa Oolongs. Rather, it offers complex aromatics, full, lush
mouth-feel, and will provide varying flavours throughout the multiple
infusions that it will yield. Brewed as one would a high-quality Fujian
ball-rolled style
Oolong, Tung Ting Oolong is shockingly good.
When many Fujian Chinese moved to Taiwan with Chiang Kai Shek at the time
of the Revolution, they had an immediate affinity with the Taiwanese who
had been making Fujian-style Oolongs for centuries. In the ensuing years,
Tung Ting and other Fujian ball-rolled style Oolong teas have been perfected both in
the traditional growing regions for this style and now other places on
Taiwan as well. Authentic Tung Ting Oolong tea is made only in the high
mountains, where it is known as ‘frozen peak’ tea. It is one of the
several most-highly-regarded Oolong teas, demanding a premium price and
high demand worldwide.
Oolong teas are brewed numerous times. Water should be cooler than that
for Black tea, and hotter than that for Green tea. It is not unusual to
steep a fine Oolong tea 5-8 times. Each steeping will offer a different
flavor profile.
Steep 2-5 infusions at 30-90
seconds each
or 1-3 infusions at 2-3 minutes each.
Water temperature should be 180˚ - 190˚ F |
