For those who like their Yin
Zhen rested and matured,( as Bob does ), this Yin Zhen
from the 2010 pre-Qing Ming harvest will be right up
your alley. White tea undergoes just a slight bit of
oxidation during its withering step. Accordingly,
white tea has just a wee suspicion of black tea flavor
about it, a characteristic of the manufacture that
also allows it to age and mellow, a boon to those who
prefer to drink it this way.
Silver Needles is the name given to traditional,
authentic, artisanal white tea. Yin Zhen should be
manufactured from the big sprout or Big White
sub-varieties of Camellia sinensis sinensis ( China
bush ) and made in only Fujian Province, China. Yin
Zhen is a magnificent tea that is able to be made only
for a short period in the early spring. Its success is
weather dependent, as it is a bud-only pluck.
Yin Zhen will always be distinctive – no other tea
looks or tastes the same. Consisting of only the first
un-opened buds of the first spring flush of new
growth, these buds have a characteristic silver hue
and white down covering.
Steep with cool water and infuse the buds several times
for a short amount of time.
Use 1
Tablespoon per 6 oz of water
Steep 2-3
infusions at 2 minutes each.
Water temperature should be 160˚ - 170˚ F |
